Different countries also use different spices to mix with the heated wine. Traditionally, the spices used are grated nutmeg, mace, cloves and cinnamon. The old-fashioned way of preparing mulled wine, meanwhile, requires blending of beaten eggs or egg yolks into the hot spiced wine.

- Should you use red wine, Zinfandel and merlot will give you good result. Should you prefer white wine, meanwhile, Riesling and Viognier are good choices.
- Should you use white wine, use unrefined sugar to get that complex taste.
- Wines aged in oak do not make good mulled wine.
- Don’t be stingy in buying the wine to turn to mull, but don’t be overgenerous either. A bad wine may become worse when heated.
- Do not use aluminium to mull the wine. The acids in the wine react to aluminium, thus giving your mulled wine a metallic taste
- Should you wish to store your mulled wine, allow it to cool first. You may opt to include the spices in the bottles, but never include the fruits
